The literal meaning of the word “espresso” could be expressed as “made there and then”.  It’s an extraordinary drink, a marvel of chemical and physical engineering, aromatic, of full velvety flavours.  Aromatic because the emulsion given by the pressure of  the oils present in the coffee frees the aroma which dissolves in the hot water, tries to escape, but it is immediately trapped by the foam.  Velvety because the sugar, protein and fats emulsified together melt into a sole essence. Cappuccino takes its name from the order of Fransiscan Minor friars, named “Cappuccini” from their custom of wearing a hood with their habit (“cappuccio” means hood in Italian).  Cappuccino is a coffee-based drink prepared with espresso, hot milk and steamed-milk foam, with the total of espresso and milk/foam making up between approximately 150 ml and 180 ml.
